From Registered Nurse to Nutrition Coach: Jen’s Real-Life Keto Journey

2 Mar 2026

If you have visited our shop in Lytham St Annes, followed us on social media, or joined us at a keto festival, you probably recognise Jen. She is a core part of the Keto Kitchen Lytham family.

Jen's journey is one that many of our customers relate to. It is a story of moving away from the "diet culture" of the past and finding a way of eating that actually works for the long term.

Today, Jen is not just a familiar face in the shop. She is a Registered Nurse who is currently studying to become a qualified nutrition coach. Her perspective is unique because she understands the science of the body and the reality of a busy life.

The Cycle of Traditional Dieting

Like many people, Jen spent years trying every popular diet available. She tried Slimming World, Weight Watchers, and various juice cleanses. She even attempted the cabbage soup diet.

She often lost weight in the short term. The problem was that she was always hungry. She found herself constantly thinking about her next meal. This is what many people now call "food noise."

When your brain is always occupied by thoughts of food, a diet is not sustainable. Jen found she would usually give up after a few weeks. It felt like a constant battle of willpower that she was destined to lose.

Seeing the Keto Difference

Jen first heard about keto through Kate, her future mother in law and the founder of Keto Kitchen Lytham. At first, she was sceptical. Like most people growing up in the UK, she was taught that fat was the enemy.

She had been told for years that fat makes you gain weight. However, she could not ignore the transformation she saw in Kate. Kate’s energy and health improvements were obvious.

The real turning point came at work. As a Registered Nurse, Jen was on a shift when she heard a medical consultant discussing the keto diet with a patient. The consultant was explaining how a low-carb approach could specifically benefit the patient's health.

This was the first time Jen had heard a medical professional actively recommend this way of eating. It gave her the confidence to look past the old myths. You can read more about how dietary guidance is changing in our post on the 2026 food pyramid update.

Starting Simple

When Jen decided to try keto, she kept things very simple. She did not worry about complex macros or counting every calorie. She focused on one main goal: keeping her intake under 20g of carbs per day.

Within just a couple of weeks, things started to change. Her energy became much steadier throughout the day. She no longer had the mid-afternoon energy crashes that are so common on high-carb diets.

The most significant change was the silence. The "food noise" that had followed her through every other diet finally quietened down. By increasing her healthy fats, she felt fuller and more satisfied for much longer.

If you are just starting out like Jen did, our beginner's guide to the keto diet is a great place to begin.

Jen’s Daily Routine

Jen’s approach to keto is practical. She does not believe in being perfect every single day. Instead, she focuses on a realistic routine that fits around her nursing shifts and her studies.

She starts her morning with a creamy coffee. She adds MCT oil to ensure she gets a good intake of healthy fats right at the start of the day. This helps keep her satisfied until lunch.

During the working week, Jen relies on our meal plans. She uses them to take the guesswork out of her nutrition. Having a freshly prepared meal ready to heat means she is never tempted by high-carb convenience food.

On the weekends, she keeps things simple. She might have a low-carb wrap with tuna or chicken for lunch. For evening meals, she sticks to whole foods like steak or salmon served with plenty of green vegetables.

Freshly Prepared vs the Giants

One reason Jen uses our meals is the quality. If you search for keto meal delivery in the UK, you will see many large companies like HelloFresh or Gousto. They often promise low-carb options, but there is a catch.

Many of those "low-carb" meals actually contain 30g or even 50g of carbs per serving. For someone like Jen who wants to stay in ketosis, that is far too high. Those brands are generalists, whereas we are specialists.

Our meals are freshly cooked in our kitchen and delivered to your door. They are strictly macro-balanced to stay under 20g of carbs. We do not use grains, hidden sugars, or flour-thickened sauces.

We also offer a level of flexibility that the big "subscription trap" companies don't. You can order when you want without being tied into a contract. You can see our current freshly prepared menu here.

Why Nutrition Coaching?

Jen’s personal success inspired her to help others. Her background in nursing gave her the clinical knowledge, but she wanted to understand the preventative side of health.

By studying to be a nutrition coach, she is learning how to support people through the same transitions she made. She understands that keto is not a "quick fix." It is a sustainable way of living low carb.

She often talks to customers about the importance of finding what works for their specific lifestyle. For Jen, that means using our meals for convenience but still enjoying cooking simple whole foods at the weekend.

Handling the Sweet Tooth

Jen is the first to admit she has a sweet tooth. Even when sugar cravings disappear, many people still want that "sweet treat" feeling at the end of the day.

Jen’s favourite way to handle this is with strawberries and cream. When she wants something more substantial, she chooses a cake from our range. She often warms up a brownie or a slice of cake and serves it with fresh cream.

All our keto cakes are handmade and gluten-free. They allow you to enjoy a dessert without kicking yourself out of ketosis.

Jen’s Top Tips for Success

If you are struggling to stay consistent, Jen has a few pieces of advice that helped her:

  • Don't fear the fat: If you are hungry, you likely need more healthy fats. It is what provides the satiety that makes this lifestyle sustainable.
  • Keep it simple: You don't need to be a chef. A piece of salmon and some buttery greens is a perfect keto meal.
  • Use the coffee trick: A coffee with cream and MCT oil in the morning is a game-changer for many people.
  • Remove the guesswork: On your busiest days, have a plan. Whether it is a pre-prepped meal or one of ours, don't leave your dinner to chance when you are tired.

Jen’s journey from a frustrated dieter to a confident nutrition coach shows what is possible. It is not about being perfect or following a fad. It is about finding a way of eating that makes you feel in control.

Next time you see Jen in the shop or on our social media, feel free to ask her about her journey. She is always happy to share what she has learned.
